Today we are making an easy vegan pepperoni. Like many of you I grew up on personal pan pizzas and summer sausage. This recipe is packed with spices, slow cooked and cured. I’m going to show you a couple tricks to get the perfect cylinder without the casing and to make the most flavorful plant based topping for you pizzas and sammie.

¼ cups konnyaku (konjac) also known as yam cake
1 tsp Sesame oil
1 ½ cups vital wheat gluten flour
2 teaspoons mustard powder
1 teaspoon garlic powder
1 teaspoon red chili flakes
1 teaspoon ground black pepper
½ teaspoon crushed anise seeds
2 teaspoons paprika
1/2 tsp sugar
1 teaspoon salt
¾ cup cold water
¼ cup tomato paste
2 tablespoons soy sauce
2 teaspoons liquid smoke
* I slice mine after it’s done and then soak it in olive oil that I heat up with red pepper flakes and smoked paprika until ready for use.
*Make sure you have a sharp knife for slice to enjoy super thin slices that curl when baked.
