INGREDIENTS
#1 Best Vegan Tomato Sauce
~ 250 g cherry tomatoes (~8.8oz)
~ 900g big tomatoes (6-8 big toms) (~32 oz)
2 cloves garlic
1 small carrot
1 big onion or 2-3 small ones
1 tbsp tomato purée
1 tbsp olive oil
1 bay leaf
a handful of fresh thyme and or oregano
1 cup vegetable broth (250ml)
cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
salt, pepper to taste
sweetener to taste, if tomatoes aren’t sweet enough add about 1-2 tsp of sugar/agave …
200 – 350g pasta of choice (7-10.6oz)
→ serves 2-3
#2 Lazy Leftover Pesto Pasta
all eye balled amounts:
2 servings cooked pasta
juice of ½ lemon
3 tbsp green pesto, vegan
3 tbsp red pesto, vegan
¼ cup non dairy milk (60ml)
salt, pepper to taste
a handful of fresh rosemary, remove before serving

i don't really get the point of wasting half a litre (plus) of water for the purpose of peeling the tomatoes if they are finally going to be blended together with the big chunks of onions, garlic and carrots anyway.

You’re a badass girl, man
Sit the tomatoes in pot & pour in boiling water and let sit. After 10 minutes, drain and then pour in cold water and leave to cool off for 10 mins; the skins will peel off much easier. (Let them cool off, o/wise you'll burn your fingers trying to peel them.) You're welcome.

As a non-vegan, the last time I was in Italy, the BEST meal I had was spaghetti pomodoro. Amazingly fresh tomato sauce with perfectly cooked al-dente pasta. I STILL DREAM ABOUT IT TO THIS DAY

Vegan food in Italy is very expensive and portions are too small 🙈 I hope you had a great time in here anyway!
As an Italian I suggest not putting vegetable broth into the sauce and add basil, it makes it super yummy But apart from that, your meals always look so good!!

I think you should have omitted the water from the tomato sauce to have a more ‘pasta sauce’ consistency! Otherwise it looked delish😍

I had been working at la romana gelateria in Roma for 3 years 🤣🤣 and i’m vegan…i could not eat anything except for 2 or 3 flavours! I also worked in Grezzana as archeologist, it was really nice!
If you want a suggestion from an italian girl to Make the tomato sauce even better, don't add the vegetale broth (it doesn't need it), because when tomatoes Cook in the pan, they left some water.
And if the sauce still be too liquid just let it Cook more time!

Add some tomato paste to your fresh tomaton sauce to thicken it naturally and deepen flavor

As an Italian Vegan let me tell you that the "marinara sauce" that you think you ate in Italy was simply tomato sauce and fresh basil, without the onions, carrots and all that stuff that you added to recreate it. But it's totally fine! Just wanted to tell you that the sauce is extremely easy to prepare because it's just tomato sauce and basil and that's it lol The next time you try to recreate it try it without the carrots and the onions, just plain tomato sauce and basil!

Italian here! Instead of cutting the garlic, put the garlic cloves whole in the sauce and then remove before serving 😉
