Vegan Lentil Bolognese Printable Recipe:

Vegan Lentil Bolognese Ingredients:
1/2 cup whole green lentils (dry)
1/2 cup white mushrooms (finely chopped)
1/4 cup yellow onion (finely chopped)
1/4 cup carrots (finely chopped)
2 cloves fresh garlic (minced)
1/2 tbsp nutritional yeast seasoning
1/2 tsp finely chopped fresh basil leaves (plus more for garnish)
1/2 tsp dried oregano
1/4 tsp pepper
1/4 tsp onion powder
salt to taste
1 1/2 cups water
1 1/2 cups crushed tomatoes
1/2 tbsp extra virgin olive oil

Vegan Lentil Bolognese Directions:
1. Add the chopped onion and olive oil to a large pot over low to medium heat.
2. Sauté the onion for a few minutes until transluscent.
3. Add in the chopped mushrooms, chopped carrots, and minced garlic.
4. Sauté the vegetables for a few more minutes.
5. Add in the water, crushed tomatoes, lentils, and all the seasonings.
6. Bring the mixture to a boil, then turn heat to low and simmer covered for about 45 minutes, or until the mixture has thickened and everything is soft.
7. Serve over your favorite pasta or spaghetti squash.
8. Top with optional fresh basil, nutritional yeast seasoning, and/or vegan cheddar style shreds (highly recommend!)
9. Dig in and enjoy!
