Easy Tomato Basil Soup is thick, creamy, and full of tomato flavor. Add in the diced onion and saute for about 5 minutes until soft and translucent. 2️⃣ 01:13 – Stir in garlic and cook 1 minute. Add in the diced tomatoes, chicken broth, salt, and pepper. Bring it to a boil and simmer for about 10 minutes. 3️⃣ 01:55 – Remove from heat. Add half of the fresh basil leaves, Use a handheld immersion blender to puree until smooth, or transfer to a blender to puree and return to the pot. If using a blender, be sure to vent the steam so pressure does not build. 4️⃣ 02:36 – Stir in the heavy cream, taste, and add more salt and pepper if necessary.   1. Yeah I was in this cafe down in south Texas that claimed to have homemade Tomato Basil Soup. And I have to admit it was tasting good until I found the soup can lid in the bottom of my bowl. They said we don't know how that could have happened. Needless to say they comped my lunch but it just proved that, their Tomato Basil was not homemade like they claimed.
