【Ingredients 食材】
* Lotus Root (蓮藕)
* Raw nuts. (花生)
* Corn (玉米)
* Carrots (蘿蔔)
* Tofu (豆腐)
* Jujubes (chinese dates) (紅棗)
* Goji berry (枸杞)

【Instructions 步驟】
1. Peel the skin off of the lotus root.
2. Chop lotus root into thick slices.
3. Peel the skin off of carrots and cut them into bite-size chunks.
4. Chop up the corn into 4 pieces.
5. Chop up the tofu into cube blocks.
6. In a pot, pour in the chopped ingredients.
7. Add in 4-5 Chinese red dates (jujubes)
8. Add in a handful of goji berries.
9. Add in a handful of peanuts.
10. Pour water into the pot to fill up the ingredients.
11. Add in 4-5 pieces of rock sugar.
12. Bring soup to boil and then let it simmer for 1 hour or more. If you have more time, the longer the soup simmers, the better it will taste.
13. Season with salt and pepper, and you’re done!
13. Enjoy your hearty delicious lotus root soup!

Prep time: 10 – 20 mins.
Cook time: 40 mins – 1 hour.
