Ingredients:
4 – 6oz. salmon fillets
Parchment paper
Coating:
1/4 cup – mayonnaise
1/2 Tbs – apple cider vinegar
1/2 tsp – Dijon Mustard
1/4 tsp – garlic powder
1/4 tsp – lemon juice
Liquid sugar substitute = to 2 tsp sugar
Pecan Crust:
1 cup – ground pecans
1 tsp – salt
1/2 tsp – ground black pepper
1/4 tsp – cayenne pepper
2 Tbs – unsalted butter, melted
Per serving (recipe divided by 4):
599 cal. / 46.59g fat / 1.07g net carbs / 39.93g protein

This is a keeper. I used two salmon fillets. I exchanged the cayenne pepper with smoked paprika and chili powder. For one of the fillets, I added parmesan cheese to the mayo mixture. I prefer the additional cheese, but both fillets were good.

Looks great! Have you noticed how expensive Pecans are these days? I was shocked!!!! Then I was terrified today when I was making a recipe and couldn't find them . We had salmon tonight! Gosh it's so darned good!

Hi Papa G, I love salmon and have a pistachio recipe that is almost identical to this one, a bit different in prep method, but same concept. I did not think of using pecans with salmon, but will give your adaptation a try next time I have pecans in the house.
