    Tripe is a very familiar delicacy to us.

    In fact, it is the perfect hangover food. Eaten as a soup, finely, or coarsely chopped and served with chilli infused olive oil, chopped garlic and vinegar is a real treat for the cold winter days and the other times of the year, as well.

    Look up for videos on Greek tripe soup – patsas is its greek name.

My bisabuela never liked the smell of menudo cooking, and also did not like using lime, but did find that a regular lemon, or a myer lemon cut in half and and placed in the pot for half of the cooking time would take care of the smell but not leave a that bitter taste that a lime does. (works well with lengua as well) .

  4. I had this for the first time when I lived in Chicago. None of the restaurants in Connecticut serve it. The Mexican food is much different in Chicago, it seems more authentic.
    I've never been to Mexico but I vote for hominy. 👍
    If you've never made this soup before, DON'T use common oregano, it doesn't taste the same. 🍺
