  1. Tia, please reconsider and keep the induction stove, I have learned it is faster, safer, more energy efficient, and drastically reduces indoor air pollution. I had gas when I was single and cooking seriously, but our family home had an electric range for 20yrs. I always wanted a gas (actually duel-fuel) range, which I finally put in during the long-planned pandemic-delayed big home renovation. We were renting elsewhere for 6 months during the worst of the construction with an induction stove. At first, I hated it and had troubles; a few cookware changes and stepping back, I learned to use and work well with the stovetop. Only now, back on gas, do I realize induction is the future of cooking. I regret returning to gas, I should have gone induction. Seriously, do not make my mistake, and stick with induction! As always a great fun video really appreciate your approachable style and making it easy. Great books too! Thanks. JLG
