My cheesy and delicious Mac and Cheese. This easy recipe has all the flavor and texture of its high carb, pasta counterpart, but with only a little over 3 net carbs per serving. A wonderful low carb option.

Spiralizer

Ingredients:
4 medium yellow squash
12 ounces cheddar cheese, shredded & divided
1 1/2 cup – heavy cream
3 egg yolks
3/4 tsp – salt
1/2 tsp – ground black pepper
1/4 tsp – onion powder
1/2 tsp – garlic powder
1/4 tsp – cayenne pepper
1/4 tsp – nutmeg
1/2 Tbs – dried chives

Makes 8 servings

  1. The sauce is very rich and satisfying — it doesn't matter whether you are using it over squash, cauliflower, or riced broccoli, I think anyone would enjoy it. I found this dish a good substitute for "mac & cheese." I am not a cauliflower fan, so this option with the squash is a welcome one. One prep note: my zoodles were still quite wet after squeezing them once, so I used paper towels on them a couple of times so the finished dish wouldn't be water-logged. Great job, Papa G, I plan to have this dish again!

  2. Wash and dry the squash, but do not peel.

    Spiralize and pat dry.

    Place half the spiralized squash in a casserole dish and top with cheddar cheese.

    Add the second layer of spiralized squash over the cheese. Set aside.

    With the heat off, add the cream and egg yolks into a saucepan and mix.

    Add the seasonings except the chives.

    Turn the heat to medium and stir.

    Let it come to a simmer.

    As soon as it does, turn the heat off and 2 ounces of cheddar cheese and mix. Then add 2 more ounces of cheese.

    Pour the sauce over the squash and add another 4 ounces of cheese.

    Cover with foil and bake at 350F for 20 minutes.

    Top with chives and bake for another 10 minutes.

    Done.
