When you think breakfast, you think pancakes. Keto pancake recipes that are easy to make and taste good are hard to find. My keto buttermilk pancakes are amazing; however, they require a little extra love. I used to only make keto pancakes on the weekends since they were more involved and required bowls and measuring spoons. These blender keto pancakes have changed my weekday breakfast game! My kids can enjoy pancakes and bacon in the mornings before they head to school. And because these keto pancakes are filled with healthy fats and protein, I know my boys won’t be hungry two hours later!

These Cream Cheese Pancakes are made using coconut flour, but you can substitute almond flour as well, just use 3/4 cup. I love coconut flour pancakes because they don’t get that burnt appearance like almond flour. These easy keto pancakes are also gluten free!!

KETO CREAM CHEESE PANCAKE RECIPE:

8 oz Cream Cheese, softened at room temperature
½ cup coconut flour
¼ c Swerve, or other favorite sweetener
½ cup heavy cream, or keto approved milk of choice
2 teaspoon baking powder
1 teaspoon vanilla
4 Eggs

Add all ingredients in a blender and blend until combined. Pour onto a pre-heated and greased griddle or non stick pan. Cook on each side until brown.

Serves 8 (makes about 16 pancakes)

  1. The reviews for this are great but I don’t want to use swerve or monkfruit or stevia or any other weird sugar substitutes that have after taste or after effects of digestive distress. Anyone know any good sweeteners that are just good old real food. For now I’m going to dry date sugar.

  2. Sooo… I definitely did something wrong. I cut the recipe into fourths. But my batter came out extremely thick. So I put some of it in a ramekin and baked it. It made the best vanilla cake. I added some whipped coconut cream. OMG, heaven!

  3. I had recently saw ur pancakes and was looking forward to making them. Followed the recipe as stated but for some reason they came out super thin. I cooked them on low heat too. However they do taste delicious. I did them them in a nutra ninja blender for about 50 seconds. I don't know if that has something to do with them coming out thin. Can you tell me what went wrong

  4. Thanks for the recipe. This is the first time I’ve made keto pancakes and first time using most of the ingredients. My one problem is about 2.5 hrs later my stomach REALLY hurt. Could it be the coconut flour or the baking powder?

  6. I made these but they raised so high they burnt on the bottoms before they were cooked inside. I think they need a little more cream to thin. They were very good though. I will adjust maybe the cream and baking powder and low heat. I had blue berries and sugar free blue berry jelly. I melted a few tablespoons of it and added a handful of blue berries; poured it over and sifted some Swerve confectioners sugar on top. You could even whip up some cream. I miss my thick Mrs. Buttersworth and this was even better.
