It’s time we had a keto nacho cheese sauce recipe that wasn’t grainy, slimly, and was EASY to make. This keto queso recipe only involves 4 ingredients and three of those ingredients are real cheese! We use sharp cheddar cheese for flavor and color. Fontina cheese for flavor and meltability. Swiss cheese for texture. And sodium citrate to make it all melty! AND…it’s only 0.1 grams of carbs per serving because we use cheeses that are low in carbs or zero carbs.
PLUS….you can store this in the refrigerator for up to a week and it doesn’t get all solid or weird.
This keto nacho sauce is perfect for some tortilla chips or pork rinds. You can even add it to your keto tacos or burritos.

KETO NACHO CHEESE RECIPE
7 oz sharp cheddar cheese, grated
2.5 oz fontina cheese, grated
3 tablespoons shredded swiss cheese
1 ⅓ cup water, divided
1 tablespoon sodium citrate
1️⃣ 05:01 – Combine cheeses and set aside.
2️⃣ 05:38 – In a medium saucepan, whisk together ⅔ cup water and sodium citrate over medium heat. Stir until sodium citrate dissolves and the mixture begins to simmer.
3️⃣ 05:52 – Gradually add one handful of cheese at a time, stirring constantly. Make sure the cheese is fully incorporated until adding the next handful.
4️⃣ 06:11 – Reduce heat to medium-low and whisk in remaining ⅔ cup water. Stir until slightly thickened, about 2-3 minutes.
