EASY KETO MEATLOAF YOU CAN MEAL PREP & FREEZE
Keto BBQ Cheeseburger Meatloaf is a favorite in our house. My kids will actually eat this meatloaf! Probably because it has two of their favorite foods – BBQ sauce and cheeseburger!
I love making meatloaf for dinner because it’s so easy! I can mix together the ingredients in the morning and then bake it in the oven when I get home from work. It’s the perfect easy keto dinner for weeknights! You can also meal prep this up ahead of time. Make two. Eat one now and freeze one for later. This recipe will save you so much time and help you stick to your goals. Plus it’s a great way to use up any extra ground beef you have!
This gluten free meatloaf is moist and packed with flavor. Traditionally, meatloaf is made by incorporating breadcrumbs or crackers into the mix in order to provide moisture and support. In place of the bread, we add vegetables and pork rinds to help keep this meatloaf moist.

KETO BBQ CHEESEBURGER MEATLOAF RECIPE
2 tablespoons avocado oil
1/2 cup diced onion
6 garlic cloves, minced
2 pounds ground beef
1/4 cup keto approved BBQ sauce
2 eggs
2 cups ground pork rinds
2 cups Colby jack Cheese
1/2 cup nut milk or heavy cream
2 tablespoons fresh parsley, minced
2 teaspoons oregano
2 teaspoons salt
1 teaspoon smoked paprika
1 teaspoon black pepper
Preheat oven to 350 degrees. In a skillet, saute onion and garlic over medium-high in avocado oil until softened. Set aside to cool.
In a large bowl, combine all the ingredients, including the onion and garlic mixture. Mix together until fully combined using clean hands or a spoon.
Press into a lightly greased loaf pan or mold into a meatloaf shape on a foil lined baking tray. Bake at 350 degrees for 45 to 60 minutes or until the internal temperature reaches 160 degrees. Remove from oven and let cool before serving. Brush with additional BBQ sauce and top with more cheese if desired. To cook from frozen, bake at 350 degrees for 90 to 120 minutes.

This is amazing! It is the most flavorful meatloaf I have ever had. I just started eating low carb and this is now my go to meatloaf low carb or not! I added red and green pepper but otherwise followed the recipe.

I just made this meatloaf recipe today and it's delicious. So moist! I used grated parmesan cheese instead of pork and added a whole onion. I made a smaller meatloaf for today/tomorrow and a dozen meatballs to freeze for later. I also forgot the BBQ sauce – what was I thinking? It still tastes wonderful. Will experiment with adding some spicy sausage to the ground beef next time. I use food-service gloves to smoosh everything together – it's fun and I don't end up with hamburger under my nails.

Can I sub out the Pork rinds with something else?
I made this last night, following the recipe as shown. I used heavy cream (as option given), cuz that's what I had. This was the most AMAZING meatloaf I've ever had or made! It is so moist! This will now be the meatloaf I make. This is the FIRST review I write EVER…for anything!

Was a little scared of the bbq sauce — even though I like bbq sauce. Just finished eating this recipe and O…M…GEE was it delicious!!! I had to find some inner discipline to STOP eating it. I substituted almond meal for the pork rinds and used only pepper jack cheese. This will definitely be one of my staple recipes. Thanks so much! Well done.
I have never really been a bbq sauce fan { I know shoot me now…} however I was wondering if I could substitute the no sugar ketchup instead… I have to say that this meatloaf looks AMAZING!!
