5 EASY KETO DINNER RECIPES USING BEEF UNDER 30 MINUTES + KETO MEAL PREP
Since my first keto meal prep video was so popular ( I thought I would follow up with another easy keto meal prep video with five dinner ideas using beef. Each recipe uses either chuck roast or ground beef. These are all recipes that take less than 30 minutes to make and are family favorites!
In this video, I give meal prep tips and give easy recipes that use the slow cooker, instant pot, oven and grill. Many of these dinners can be made up earlier in the week or the night before to make your life EASY!!! All use beef – either a roast (I use chuck roast) or ground beef.

SLOW COOKER KETO STEAK & PEPPERS
(double the recipe if using for fajita pie)
3-5 pounds chuck roast or shoulder roast, cross-rib roast
1 red bell pepper, sliced
1 green bell pepper, sliced
1/2 yellow onion, sliced
1/2 cup canned crushed tomatoes
3 tablespoons liquid aminos
2 tablespoons red wine vinegar
dashes of hot sauce
1/2 tablespoon salt
1 teaspoon garlic powder
Add all ingredients to the liner of a slow cooker. Cover and cook at low for 6 to 8 hours or high for 4-6 hours. Before serving, shred the beef with two forks or by using an electric mixer. Serve over cauliflower rice or shirataki rice. Or use as fajita meat.
KETO FAJITA PIE
Keto Pie Crust
3 1/2 cups shredded mozzarella cheese
1 1/2 cups almond flour
1 teaspoon baking powder
1 teaspoon xanthan gum
Steak Fajita Filling
2 tablespoons avocado oil
1 pound pre-cooked or leftover steak or roast, diced into bite sized chunks
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1/4 yellow onion, sliced
4 ounces cream cheese, softened
1 1/2 cups shredded cheese
2 teaspoons taco seasoning
Preheat the oven to 400 degrees Fahrenheit. Start by making the keto pie crust. Melt the mozzarella cheese using a microwave safe bowl in the microwave for 2 minutes or in a non-stick skillet over the stove top until melted. To a food processor, add all ingredients. Pulse until combined and a dough ball forms. Place dough into between two pieces of parchment paper. Roll out dough into a circle until the diameter is 2 inches larger than your pie plate. Remove the top layer of parchment paper. Place pie pan upside down on top the center of the pie crust. Flip upside down so the pie crust lands on top of the pie plate.
Press the pie dough into the pie pan. Get rid of excess if needed. Poke holes in the bottom of the crust. Bake in a 400 degree oven for 10 minutes.
While crust is baking, move on to making the fajita filling. Add avocado oil to a skillet. Heat over medium-high heat, then add bell pepper, onions and left over beef. Saute until slightly softened. Remove from heat.
In a small bowl, add cream cheese, 1 cup of cheese and taco seasoning. Cream together with an electric mixer.
Remove pie crust from the oven and decrease oven heat to 375 degrees. To the bottom of the pie crust, sprinkle 1/4 cup shredded cheese. Using half of the mixture, drop dollops of the cream cheese mix over the base of the crust.
Add the steak and pepper mixture to the pie crust. Then add remaining cream cheese mixture. Top with remaining cheese. Bake at 375 degrees for 6-8 minutes or until the cheese is melted and bubbly.
