Hi! I am Lindy, AKA Paleobarbie. I am just a mom with hypothyroidism and arthritis, living a Keto life. It has been a long journey to find a way of eating that makes my symptoms feel better and that also gets the weight off. I found Paleo about 7 years ago and it lead me to a Ketogenic way of eating. Lindy’s Easy Keto Crockpot Lasagna
2-3 zucchini
1 pound ground beef
1 TBS freeze dried onions chopped
1 TBS garlic powder
1-2 TSP Italian seasoning
Pink salt
Mozzarella cheese sliced or shredded
2 cups Ricotta
1 jar Rao’s Marinara or home made
Season ground beef with half of the seasoning and onions. Brown and Drain off the meat. Put 1/3 of the jar of sauce on bottom of crock pot. Slice zucchini in thin, long slices. Place a single layer across crock. Season. Combine ricotta and ground beef and spread 1/3 to 1/2 on the zucchini. Cover with cheese and more sauce. Continue the layers. Cook on low 3 hours. Let stand unplugged 30-40 min. Enjoy
