Easy Healthy Lemon Bars

Today I’m going to show you how to make lemon bars with oatmeal crust.

These light and creamy lemon bars are healthy treat you can’t resist.

They’re naturally sweetened, has no butter and no flour, but still great in texture.

HEALTHY LEMON BARS RECIPE

Ingredients:

For crust:
1 cup ground oats (or oat flour) (100g)
1/4 cup honey (85g)
1/4 cup coconut oil (50g)

For filling:
5 large eggs
1/2 cup honey (170g)
1/2 cup lemon juice (120ml)
1 tbsp lemon zest
1/3 cup ground oats (or oat flour) (35g)

Preparation:
For the crust: in the bowl, combine the ground oats, softened coconut oil and honey. Mix with the fork until the dough just comes together.

In a lined 8 by 8 inch (20 by 20 cm) baking pan spread the oat mixture, pressing with the fingers around the corners.

Bake at 350F (180C) degrees for 10 minutes. Let it cool until you make the lemon filling.

For the filling: in another bowl, beat your eggs, then add the honey, lemon juice, lemon zest and ground oats. Mix until well combined.

Pour the egg mixture over the oatmeal crust and bake at 350F (180C) degrees for 20-25 minutes, until set but still soft when gently touched.

Let it cool for 1 hour at room temperature, then place the baking pan into the fridge for 3-4 hours.

Cut in 9 equal squares (or 16 if you want smaller pieces).

Dust with the powdered sweetener, if you wish.

  2. Hi, I need your help. I made this today, it's delicious, but my base is quite hard, harder than normal lemon cake to cut and separate with fork, why might this be? When i prepared the base and stretched it out on the oven tray, I made it very thin aswell. I must say the base came out very thin too, its jot as thick as yours. I did use 4 large eggs.
    I want to make it again but want to make it perfect this time 🙂

  3. I tried and it was not tasty at all. Too much coconut oil, it's overpowering even the lemons. The crust is extremely oily. And the filling doesn't look like in the video (semi-transparent), it's solid yellow (which is obvious as you beat 5 eggs). And I really doubt about "healthy" version as you have fats from coconut oils and 5!! yolks + sugar from honey.

    Made a double batch since they had such good ratings, and they’re amazing!
    Simple to cook and the custard layer is soo creamy inside!
    I also made his healthy chocolate doughnuts in bun form, and they cooked perfectly together. Amazing recipes!
