INGREDIENTS

#1 Lemon & Dill Baked Tempeh 0:00

2 blocks tempeh, cut into triangles or strips (400g = 14.1oz)
about ½ cup of water for steaming (125ml)
2 sheets of roasted seaweed (dol gim or nori for example)

for the marinade:

zest and juice of 1 1/2 lemons, go for 2 lemons if desired
a bunch of dill, fresh or frozen
a heavy pinch of salt
2 tsp sumac
¼ tsp chili flakes, more if desired
1/2 tsp paprika
1 tbsp maple syrup
3 tbsp olive oil
2 tbsp water

also medium sized yellow potatoes, as many as you want + a little olive oil and seasoning for each one

→ serves 4

#2 Vegan Pizza Baguettes 4:04

for the sauce:

4 ½ tbsp tapioca starch (sub w cornstarch – the sauce will be less thick and stringy tho)
4 tbsp water
1 cup soy cream (250ml)
1 ½ tbsp nutritional yeast
⅛ tsp turmeric
pepper, garlic and onion powder to taste
salt to taste (I add ⅓ tsp)
1-2 tsp white wine vinegar
1 tsp miso paste, or more to taste
optional: 1-2 handfuls of store bought vegan cheese

4 baguette halves (15-18cm)
4 heaping tbsp store bought tomato sauce
toppings of choice: cherry tomatoes, spring onion, spinach, pepper, mushrooms, fried onion, smoked tofu etc…

→ yields 4 baguettes, I’d say that serves 2?

Marinara Sauce (end of this vid: )

#3 Smoky BBQ Couscous Salad 05:52

Harry Potter Video:

¾ cup couscous, dried (112g)
¾ cup boiling water (180ml)
1-2 tsp olive oil
a generous pinch of salt

3-4 small sheets of rice paper

bacon marinade:

3 tbsp smokey bbq sauce
1 tsp mustard
2 tsp oil
1 tbsp white wine vinegar

for the dressing:

leftover 2 tbsp of bacon marinade
2 tbsp vegan sour cream or thick unsweetened soy yogurt
1 tbsp vegan mayo
1 tbsp white wine vinegar
salt pepper to taste, if needed

also:
greens (spinach, arugula …)
cherry tomatoes
sunflower seeds
spring onion …

serves 2 as a meal and 4 as a side

#4 Cheesy Vegan Pasta Bake 8:28

½ block smoked tofu (100g = 3.5oz)
1 onion, finely minced
1 clove garlic, finely minced
oil for the pan
¼ cup white wine (60ml)

225g – 250g shortcut pasta (7.9oz – 8.8oz)
pinch of salt for the pasta water

for the sauce:

4 tbsp tapioca starch (sub w cornstarch – the sauce will be less thick and stringy tho)
4 tbsp water
1 cup soy cream (250ml)
½ cup non dairy milk (125ml)
1 ½ tbsp nutritional yeast
⅛ tsp turmeric
pepper, garlic and onion powder to taste
salt to taste (I add ⅓ tsp)
1-2 tsp white wine vinegar
1 tsp miso paste, or more to taste
2 handfuls vegan pizza cheese

top with 1-2 handfuls of breadcrumbs or more vegan pizza cheese

yields enough for an 8 x 8 inch (20 x 20 cm) pan, can be slightly bigger or smaller for sure

  1. Hey Mina, I bought some vegan protein powder a while ago but I have no idea how to incorporate it in recipes. I know you sometimes use it in your videos. Maybe you could collect your recipes that include protein powder and share them in a new video 🤗
