Making a mug cake mix and storing it, works out great because all it needs it one egg, 2 Tbsp butter, the mix and one minute of cooking i the microwave. I keep this mix ready because I don’t have to pull out all the ingredients each time I want to make a mug cake. That way it doesn’t remain a quick mug cake anymore.

Aluminium free Baking Powder :
Unsweetened Cocoa Powder :

Ingredients for the mix:
2 Cups Almond Flour
3 Tbsp + 2 tsp Coconut Flour
1/2 Cup Cocoa Powder
2 1/2 tsp Baking Powder
10 Tbsp Erythritol
1/2 tsp Salt

Directions for making the mug cake:
In a mug melt 2 Tbsp Butter
Add 5 Tbsp Cake Mix
Add 1 Egg
Stevia as per taste
Mix thoroughly and cook in the microwave for 1 minute

  1. I am mentioning the quantity for Erythritol wrong. Please follow the recipe in the description or down here. Sorry about the goof up.

  2. Thank you for sharing this! It's been surprisingly difficult to find a recipe for a "make-ahead" batch of keto/low carb mug cake mix. But it makes so much sense to mix the dry ingredients beforehand. Happy to have found this 🙂
