Ingredient list:
▪️Egg – 1 large
▪️Egg white – of 2 eggs
▪️Milk, fat-free – 1⁄4 cup
▪️Ricotta cheese – 1 tbsp
▪️Oat flour – 1⁄2 cup
▪️Zucchini – 1⁄2 medium, grated
▪️Olive oil – 1tsp
▪️Ground black pepper – a pinch
▪️Sea salt – a pinch
Instructions:
▪️Preheat the oven to 400°F/200°C.
▪️Spray/drizzle a cupcake baking pan with olive oil.
▪️Whisk the egg and egg whites together in a bowl. Mix
in the oat ·our, ricotta cheese, and grated zucchini into
the egg mixture. Sprinkle it with salt and ground black
pepper.
▪️Pour your mu1⁄4n mix into the cupcake pan.
▪️Bake for 15 minutes. Let it cool before taking the
cupcakes out of the pan.
