  1. I just happened to have a nice piece of salmon in the freezer, so I made this dish. Unfortunately, I didn't have any saffron, but did want the pretty yellow color in the rice, so I added a bit of turmeric. I had some red, yellow, and orange peppers which needed to be used, so I chopped some and added it to the veggies. Added some extra color and flavor. Have planted some saffron crocus, so hopefully, I will have some threads in the spring. This is a delicious dish! Thank you!

  2. Thank you so much for this recipe. I cooked it today for my father who turns 96 next week, and who doesn’t know Spanish food at all. He loved it! It’s an easy recipe without risks if you follow the timing and liquid quantity for the rice. I used tomato paste instead of real tomato, about half your quantity, and the result was also nice, a bit thicker than yours, but very tasty.
    As Mr Spock would say: Live long and prosper, and give us many more recipes.

  3. just ate the last forkfuls. this was divine, albert. thank you! everything came together so fast. i made a mistake and tossed the vegs in before the salmon, so pushed them to the side, and sauteed the salmon, then pulled it out and continued on. my mouth is very happy!

  4. Up until recently I had not been a huge fish fan. Would probably eat fish once a year, but have been ordering blackened catfish and blackened tilapia a lot, but want to start cooking it for myself. Would either of these be firm enough for this recipe? Any recipe recommendations for these would be much appreciated. 😍

  5. I grew up on the Alabama gulf coast hence no stranger to fried shrimp. Two days ago I made your Trench Coat shrimp. For bier I used a Paulaner Pils infused with Golden Saffron, and followed the instructions to the T. By Far this recipe is THE Best fried shrimp EVER!! Thank You Albert!

  6. Good afternoon, I just love the dishes you present. They are easy and so nutritional!! I love salmon but the boys are not fish lovers, how if I substitute it with chorizo sausage, I will just slice them maybe also sauté them before adding the veggies, just like the salmon was partially done I'll do the sausage.
