Kale Salad


1 bunch of kale (6-7 cups when chopped)
1 apple (I prefer honey crisp or another really crisp variety), diced
1/3 of a large sweet onion, diced
1/2 or more avocado, diced
1/4 cup fresh basil leaves, chopped


De-stem the kale leaves and then chop them thoroughly. Take the chopped kale leaves in your clean hands and firmly massage them until they begin to soften. (Your hands may even hurt a bit.).Add the kale to your salad bowl. Top the kale with the diced apples, onions, and avocado. Add the chopped basil if desired. (I LOVE it!) Toss with the curry vinaigrette (below) and taste and feel the health.

Curry Vinaigrette


1/4 cup extra virgin olive oil
1/4 cup “cloudy” variety of apple cider vinegar (like Braggs)
2 tsp dijon style mustard
2 tsp honey
1 tbsp curry powder


Whisk or blend all the ingredients together as you see fit. I prefer to put my salad dressing ingredients into a small jar with a top and shake to blend. Drizzle dressing over your salad as desired. It is always best to underdress your salads as too much dressing just adds excess calories and swamps the yummy flavors of the veggies!
