✰ Baked Apples + Pears Oats
Serves 2

1 apple
2 pears
3 tbsp maple syrup
1/2 tsp cinnamon, 1/8 tsp kosher salt, 2 pinches ground cloves
1 cup old fashioned oats
3/4 cup water
3/4 cup soy milk
pinch of salt
1/2 tsp vanilla

Preheat the oven to 375. Cut the fruit into bite sized pieces. Add the maple and spices and toss well to coat. Bake for 30 minutes or until very tender.

In the meantime, add the oats, water, soy milk and salt to a saucepan and bring to a boil. Reduce the heat to medium and simmer for 8 minutes or until thickened. Stir occasionally. Add the vanilla at the end and distribute between two bowls. Top with the baked fruit and a drizzle of nut butter 🙂

  2. Amazing 7 years Nikki 🙂 I can totally relate to what you said about the little choices, almost six-ish years ago I heard someone say a really similar thing – you have the choice to choose compassion at least 3 times per day, plus snacks!
    when framed like that, it's so obvious… why wouldn't you make the compassionate choice?

I went vegetarian half my lifetime ago, but only in the last two years did I finally commit to making sure all my own cooking and purchasing decisions are egg, cheese, and dairy-free. I've tried so many NEW foods and flavors that don't miss my old diet at all!

I hate to admit it but I'm not vegan anymore because my family doesn't want to eat that way and I guess since I'm purchasing the ingredients anyway I end up consuming them with family meals and such. I still would never eat meat and I love making your recipes. But unfortunately I have to add meat for them or there's an uprising 😭😭

    I was wondering how you could afford your own apartments and living expenses in one of the world's most expensive cities to live in? I am not a YouTuber so I don't know, but does a channel with your following/views fully support your lifestyle and pays the rent and all that? Is the apartment you live in owned by yourself/family member or rented ? 🙂 Thanks for a lovely video and interesting recipes

  10. I normally vibe with your videos but I was totally in love with everything in this one. I’ve been vegan for six years now! On the subject of salt (kinda), do you worry about iodine intake? I almost picked up a box of that Morton’s last week but set it back when I realized it’s not iodized. It’s just so expensive to add another supplement to my list of things to buy it seems.
