Cold zucchini soup

Ingredients:
(Pickled strawbs)
[pickle liquid]
-1 1/2 cups apple cider vinegar
-1 tbsp coriander seed
-1 tbsp red chili flake
-1 tbsp green pepper corn
-salt and maple sugar to taste
-1 cup ice
—-
-1 cup strawberries submerged in pickle liquid
(Whipped ricotta)
-1 cup ricotta (duh lol)
-2 tbsp lemon zest
-lemon juice to taste
-flakey salt and black pepper to taste
(Zucchini soup)
-2 cups zucchini sliced and roasted
-1/2 cup yellow onion sliced and roasted
-2 cups veggie stock or enough til smooth
-1 tbsp jalapeño powder
-lemon juice, salt to taste

Garnish with ricotta, pickled berries, cucumber, extra virgin olive oil, black pepper, herbs.
