These look great. The texture of courgettes is disgusting, so I'm going to try this and hopefully eliminate that yukky texture.
I made this last night and loved it. I grated some Parmesan on top but next time I’ll try Manchego.
I technique and it's great Because my zucchini will usually come out bushy. I love this dish.

Albert, have you tried this with garlic instead of garlic powder, and if so are any adjustments needed? my inclination is to simply replace one with the other given the fairly short cooking time, though it might also be a good idea to heat the garlic separately with some chilies (a mandatory addition for us) and simply add that over the courgettes when they are done. Just occurs to me that a chili-garlic dip (in olive oil or perhaps even mayo?) might be the way to go. or tamarind chutney. Thanks for the inspiration.
