Ingredients: –
500g Fresh Carrots (6 Carrots) – Roast in Fan Oven on 180C for 35 Minutes.
400ml Organic Coconut Milk
125g Granulated Sugar
1 Tablespoon Amaretto
1 Tablespoon Baileys (Optional)
1 Tablespoon Maple Syrup
1 Teaspoon Vanilla Bean Extract
1 Tablespoon Mild Olive Oil (To Bake the Carrots)
½ Teaspoon Nutmeg
½ Teaspoon Cinnamon Powder
A Pinch of Sea Salt
Hand Blender

Garnish is Crushed Pistachios
