  1. @DoctorMike great video. I smile and sometimes giggle at most of your videos. I feel the need to critique you a little bit. When you placed the chicken in the pan you let them drop toward you. When placing your protein, or anything really, in a pan always, always place them so they touch down in the pan surface closest to you and gently lower away from you. It's for safety. If the pan is hot (as it should be to get that nice sear) and with a bit of oil in the pan, that oil is going to be hot. The last thing you want is for it to splash on you should it splash out of the pan. As a doctor I'm sure you agree that oil burns are no joke. Be happy, healthy and safe.
