This classic vegan meatloaf has been in the works here in our test kitchen for months. Using whole food ingredients to get that “meaty” texture has proven to be an interesting challenge. This meatloaf sets up with just the right firmness, texture, and smoky-tomato flavors reminiscent of the classic meatloaf you probably grew up with, but has all the amazing benefits of being fully whole food plant-based, gluten-free, refined sugar-free, and refined oil-free.   1. Thanks for the recipes! I have wondered where people were getting the wrinkly looking parchment! I have wrestled a lot trying to line pans with parchment.

    Since I have more than one loaf pan the same size (with sloped sides), I would set a second pan on top of the parchment in the first pan, to really press it into the corners. I do this with foil on baking sheets, and to even out pie crust or shortbread dough, with the parchment or wax paper between and the second pan on top, pressing it down with my hands until it is flattened to the desired uniform thickness.

  3. Hey folks! I highly recommend this recipe! It didn’t fall apart when I sliced it just 20 minutes out of the oven The buckwheat makes the trick in keep all veggies together Next time i would add maybe some parsley or any other herb and last but not least : the tomato sauce on top is delishhhhhh I put extra hot paprika and balsamic vinegar It is an excellent recipe for those who don’t eat meat…. Thanks for the video again

  4. Thank you so much! I am soaking my buckwheat and quinoa now! I can't wait to make this one. It seems like the perfect dish to have over a few days to serve with so many different sides. And like you said, the next day it will taste even better. I bet that tomato topping would be good on so many other things too. mmmmm
