If I could only pick one legume in the world to be available I think my first choice would be chickpeas, otherwise known as garbanzos. They are the perfect food for a vegan plant based diet or any diet for that matter. Chickpeas are loaded with protein, fiber, and phytonutrients.

I love chickpeas.. because they take forever to cook.. my little trick for chickpeas and it hasn't failed me yet.. 1 or 2 cup dry chickpeas 1 tablespoon salt and 1 teaspoon baking soda add fresh water about 2 to 3 inches above the peas stir well to dissolve the salt leave it overnight in the morning rinse the peas well… I cook mine in the instapot press manual 15 minutes and let the pressure fall on its own they come out so soft it is unreal I am sure it's the baking soda trick lol
