1 – Long Red Chilli, Half for Broth, Half for Garnish

2 – Star Anise
1 tsp (3g) – Fennel Seeds
1 – Cinnamon Stick
1.5 Litres – Chicken Stock
800g (1.7 Pounds) – Chicken Thigh
200g – Flat Rice Noodles
1 – Lime
1 Tbsp (15ml) – Fish Sauce
