Ingredients:
9”x13” (3-quart) casserole dish
1 rotisserie chicken (about 20 ounces), shredded
1 Tbs – poultry seasoning
8 ounces – mushrooms, sliced
6 strips – uncooked bacon, diced
5 ounces – whole leaf baby spinach, stems removed
2 1/2 cups – Alfredo sauce (Papa G’s
1/4 cup – sour cream
1/2 cup – shredded mozzarella cheese
1/2 cup – shredded cheddar cheese
1/2 Tbs – unsalted butter (greasing casserole dish)

Per serving (recipe divided by 6):

  1. This was a hit tonight (my husband is 'difficult'). The only change I did was not all that cheese (very American…lots of cheese on every casserole) which is too much for us. But I added the normal amount in the Alfredo Sauce but topped the casserole with the cheese I happened to have – a handful of grated Appenzeller cheese. It was just right and no cheese too dominant. I love the idea of using rotisserie chicken (never used it before), easily found here with the spinach, mushrooms and bacon – wonderful flavours!. Great time saver and delicious idea. Wanted to make this last night and had all prepared, but husband 'was not feeling well' LOL! I have leftover but will freeze it. Btw, I am used to making the Alfredo 'sauce' in the true European Italian style, but this American version with cream and an egg yolk I can see is very versatile. Thank you for the inspiration!

  2. Made this recipe a couple of days ago & it was so good & definitely a keeper! I didn’t use the Paul Prudhomme seasoning since my store didn’t have it; just added garlic powder & it was still delicious!! Thank you for your recipes- BTW, I’m sure you’ve heard this but I love your voice. Reminds me of the narrator of the Disney movies I watched as a kid😊
