  1. I was in a wonderful little Mexican place in my town a few years ago and the cook staff took a lunch break over bowls of this soup, which isn't on the menu, and I thought it looked delicious. I make all kinds of soups and stews, so this is right up my alley. What I love love love is the homey, family-recipe quality you're bringing out here. My own mom made lentil soup when I was little and while I've tweaked my own version in various ways over the years, it's a carrying on of what she made, and when the next cold snap arrives I'll be carrying on your mom's cooking too.   3. What does chayote taste like? There's nothing wrong with mushy cabbage. It goes really well in soup. In Tennessee we make something similar and it's called "boiled dinner", but we use ham hocks instead of chicken. I have had it where the cabbage is really soft and where the cabbage is still tender but firm. Both are great. It always tastes better the next day as leftovers, but if you leave it on until things get mushy, it makes it taste similar, because the flavor from all the veggies distributes more.
