🥦🥔 Cheezy broccoli & potato soup with nourishing ingredients. 💕Plant-based.

1 small onion, diced
2 medium carrots, diced
2 ribs celery, diced
4 cloves garlic
2 TBSP vegan butter or olive oil
red pepper flakes (optional)
2 russet potatoes, peeled and cubed
4 cups veggie broth (chick’n style is my fave)
1 cup raw cashews, soaked 4+ hours
2 cups broccoli florets
2 bay leaves
1 tsp onion powder, garlic powder
1/3 cup nutritional yeast (or more to taste)

Sauté onion and celery in butter/oil till onion is translucent. Add carrots, garlic, potatoes. Add enough veggie broth to cover, along with bay leaves, onion and garlic powder.

Bring to a boil, reduce heat to low and simmer for 20-25 minutes or until potatoes are tender. Remove bay leaves and discard.

Transfer several ladles of soup to blender. Add soaked cashews and purée till smooth. Add puree back to pot of soup.

Add in broccoli florets and continue to cook until tender, another 3-5 minutes, stirring regularly.
