Carrot Cake Muffins Low Carb Healthy No Refined Sugar Recipe for Diabetics Cancer Autoimmune


No refined Sugars! Get Fit by eating clean. Let me show you how.
Less than a cup of flour in the entire recipe.
Substitute carrot pulp for shredded carrots.

½ Cup Egg Whites OR 1 Egg (Egg White Discounts available see Instagram page)
½ Cup Butter or ¼ Cup Vegetable or Canola Oil
½ Cup Non-Fat Greek Yogurt
½ Cup Molasses or Date Syrup or Brown Swerve (see links below for products)
Salt to Taste
2TBS Vanilla
2TBS Cinnamon
½ tsp Cardamom Powder
2/3 Cup Gluten Free Flour (see links for products below)
1-3 Cups Carrot Pulp (Cold Press Juicers, Mascaraing Juicers 3 Cups) (Standard Juicers 2 Cups) (Shredded Carrots 1 ½ Cup)
¼-1/2 Cup Hazelnuts or Favorite Nut of Choice
¼ – ½ Cup Raisins
Additional Salt to taste as desired
Wisk all ingredients and then stir in carrot, nuts, and raisins
Bake on 350 for 15-18 minutes. If the carrot pulp is wet add an additional 3-5 minutes. Toothpick should come out clean. Enjoy!
