Peel off the skin for carrots and beetroot . Chop them into small pieces and put them in separate bowls. 2. Take a wide pan and add butter. Once it melts, add bay leaves and cinnamon. 3. Add the chopped onions and sauté for 2 mins. 4. Add garlic cloves and sauté for another 2 mins. 5. Add chopped carrots and chopped beetroot. 6. Now put in the salt and pepper. Mix it all well and cook for 2-3 mins. 7. Pour water in the pan until all the vegetables are completely immersed. 8. Cover the pan with a lid and cook the veggies for about 20 mins on a medium flame. 9. After 20 mins, turn off the stove and cool down the vegetables completely. 10. For the croutons, add olive oil to a pan and drop in the chopped bread pieces. 11. Toast the bread pieces until they are golden brown in color and crispy in texture. Keep them aside once they are ready. 12. Once the vegetables are cooled down, remove the bay leaves and cinnamon. 13. Transfer the cooled down vegetables to a mixer jar and grind it into a fine puree by adding a little water. 14. Now pour this puree back into the pan in which the vegetables are cooked and add water to it to dilute the soup. 15. Add in the fresh basil leaves and mix it all well. 16. Check for seasoning, add salt and pepper if required. 17. Cover the pan with a lid and cook the soup for 5 mins on a medium low flame. 18. That’s it, drop some croutons in the soup as desired. Soothing, mildly flavored and delicious Beetroot Carrot Soup is ready to be served hot and nice with bread sticks or any kind of bread on the side. Hey guys!
