1 1/2 pounds andouille sausage or smoked sausage, sliced
1 small onion, finely chopped
2 tablespoons garlic, minced
3 tablespoons Cajun seasoning (I used slap yo mama)
2 tablespoons extra-virgin olive oil
1 (30 oz.) bag frozen shredded hash browns
8 cups low-sodium chicken broth
1 (10. 75 oz.) cream of chicken soup
1 (8 oz.) package cream cheese, room temperature
1 cup sharp cheddar cheese, grated, plus more for garnish

Crockpot
Heat olive oil in a large pan or skillet over medium high heat and sauté onion and garlic minced or until softened. Add sausage and cook until browned on all sides.
In the crockpot whisk together chicken broth and chicken soup until smooth and combined.
Add cajun seasoning
Add potatoes and Transfer sausage and onion to crockpot
Cover and cook on high for 30-60 minutes stirring occasionally.
Add cream cheese and cheddar cheese to soup and cover and cook for another 30-60 minutes, or until incorporated and smooth. Taste and adjust seasoning, if necessary.

Instant pot

Set on Heat olive oil in a large pan or skillet over medium high heat and sauté onion and garlic minced or until softened. Add sausage and cook until browned on all sides.
In bowl whisk together chicken broth and chicken soup until smooth and combined.
Add cajun seasoning
Add potatoes and Transfer sausage and onion to to instant pot.
Pour soup/broth on top.
Cover and cook on soup setting with natural release.
Add cream cheese and cheddar cheese to soup and cover and let cheeses melt 15-30 minutes. Remove lid stir incorporated and smooth. Taste and adjust seasoning, if necessary.

Stove top
Heat olive oil in a large pot over medium high heat and sauté onion and garlic minced or until softened. Add sausage and cook until browned on all sides.
In large bowl whisk together chicken broth and chicken soup until smooth and combined.
Add cajun seasoning
Add potatoes and soup/broth
Cover and cook on low for 3-4 hours or low 7-8 hours stirring occasionally.
Add cream cheese and cheddar cheese to soup and cover and cook for another 15-30 minutes, or until incorporated and smooth. Taste and adjust seasoning, if necessary.
