INGREDIENTS
2 tbsp (30 ml) cooking oil
1 tbsp (15 ml) chopped ginger
1 tbsp (15 ml) chopped garlic
1 tbsp (15 ml) chopped French shallot/onion
4 cups (1kg) butternut squash, peeled and cut into cubes
½ tbsp  (7 ml) curry powder mix optional
½ tsp (2 ml) yellow curry paste optional
400 ml coconut milk
600 ml chicken or vegetable broth/stock
½ tbsp (5 ml) salt
