I wanted to create a super easy recipe that’s perfect for Thanksgiving. It’s so simple, yet sooo delicious! You can also use a grated pumpkin instead of a butternut squash if you like – I just grabbed a butternut squash because that’s what my supermarket had available. I tried a version with spices but I actually prefer it without, it kinda tastes fresher and cleaner (but you can optionally add 1 tsp cinnamon powder and 1/2 tsp ground nutmeg if you like.).
