Broccoli and Feta Casserole | Keto Recipe


This tasty crustless breakfast quiche, or you could also call it a breakfast broccoli, bacon and feta casserole, is a simple, nutritious, nutrient dense recipe that perfectly balances the taste of the broccoli, bacon, and feta cheese, but adds a freshness of lemon zest and lemon juice. The lemon is a particularly tasty ingredient that adds a refreshing flavor that perfectly completes both the broccoli and the feta cheese. This keto bacon and feta casserole can be served as a warm breakfast or lunch. To make this into a full meal for dinner, you could also add a slice of my Keto Walnut Bread, along with one of these soups: my Keto Thai Pumpkin soup, Roasted Tomato and Red Pepper Soup, Cream of Mushroom Soup, or with a tasty salad such as my Avocado Spinach Strawberry Salad with Balsamic Vinaigrette.

The Broccoli Feta Casserole is an easy, low carb recipe that is also a perfect as a diabetic diet recipe, a paleo recipe and, since it is grain free and gluten free, is also suitable as a celiac diet recipe. The best thing is that, although this is a keto diet recipe, it has a rich complex flavour that is sure to please most people who follow a specific diet plan as mentioned, or who just want a very delicious and easy breakfast, lunch or dinner that uses simple pantry and fridge staples that you probably already have at home.

  1. Back at home today, after a really good trip to Merida for restocking. It went really well and I doubt I will have to return for at least 3 weeks, and this was the best trip yet, as they now are following good Social Distancing protocols, and some of the confusion about the Governors orders have been cleared up. The confusion resulted in several of us over 60 residents being turned away from entering Merida. I was not one of those. I pass for under 60, even though I am 66! Regardless, Feta, Broccoli and Heavy Cream are two of the things I stocked up on, so you can bet I will be cooking this Friday. Thanks! This looks totally delicious. Oh BTW people in general. Believe Angela when she says her Walnut Bread is Addictive!! OMG it is incredible. I was able to secure 8 tins of Coconut Milk, full fat this trip exclusively for making it!! Be Well all!!

  2. This looks reeeeealy good! I like the idea of that with the avacado/cucumber cold soup! And the ingredients are economical for sure!!! I have an idea for a keto recipe that I miss from where I grew up. I would love an authentic tasting Albondigas that is keto friendly! That would be super awesome.😊👍💜❤💜❤
