BEST KETO SHRIMP FRIED RICE I Super Fluffy Low Carb Fried Rice! Easy and Simple Meal or Side Dish


You will never miss white rice after making this! It’s amazing, tastes like fluffy rice and best of all, guilt free!

Serving Size: 2-3

1 lb bag of cauli-rice
1 lb shrimp
1/4 cup mixed veggies
2 eggs (you can use 1 as well)
1/4 tsp ground ginger
1 tsp garlic
1 1/2 tbsp soy sauce or coconut aminos
1 tsp sesame oil
1/4 cup oil
Garnish with cilantro or green onion

1. Take your frozen bagged cauli-rice and put it in the microwave for 3 minutes.
2. Take out and cut a corner of the bag to drain out all the water. You want to squeeze as much as possible and get all of the water out. Set aside. This is the quickest and easiest way to get fluffy rice.
3. In a pan, turn on medium high heat and add your oil. Cook your shrimp for 1 minute on each side and take them out, placing them on a plate lined with paper towels.
4. Now, take 1-2 tbsps oil out, you’ll be saving this for the eggs. Saute your veggies until tender and translucent.
5. Add your cauli-rice and cook until nice and fluffy. Add your soy sauce, sesame oil, ginger and garlic at this time.
6. Now, push the fried rice to the side and make space for your eggs. Add 1 tbsp oil back to your pan and cook your eggs. Add a dash of salt and pepper to season.
7. Now, mix in with the fried rice and add back your shrimp. Stir fry for 2-3 minutes and you’re done! Garnish with green onion or cilantro and enjoy!

  1. So my past experience with Cali- rice is it still tastes like Cali , I tried it to make sushi, ( failed ) , I miss rice a lot as it was a staple ingredient in my past diet , I will try your recipe and I'm hoping that it will pass the taste test , Do you have a recipe for sushi ?

  2. I just had to come back and leave a comment. When I tell you this was THE BOMB…. I’m not lying. Omg. I usually don’t like scrambled eggs or cauliflower but this recipe is so good because the cauliflower soaks up the flavor of the other ingredients. I made a double portion with extra shrimp and rice so mine was a wee bit soggy towards the bottom but it was still delish!!!!! 10/10 this is going to be one of my staple dishes. It’s so easy to make and actually pretty cheap. I’m going to try this with pollo guisado. Mmmm yum yum. You’re the real deal… your recipes are amazing! 😇

    Edit: this is best eaten fresh. I cooked a big batch for the week but once you reheat it in the skillet after about 4 days it gets very mushy. Cook this fresh guys. It’s still really good though. 💁🏽‍♀️
