  1. For years I've been telling people to roast or at least brown the meat before adding to the soup. I get mad when I see people just throw the raw meat in the soup. It still taste great but the flavor better with roasting.

  2. I just purchased a package of beef neckbones. I love their flavor, Never thought of roasting them first. Last time I made soup, I tenderized mine by boiling them in seasoned water with Webers Roasted Garllic & Herbs, 2 bay leaves, marjoram, a tablespoon of Better than Boullion beef base, and italian seasoning for an hour or so before adding my veggies. I am going to try your way for a change. I use the same vegetables (without the pepper!), plus a sweet potato which adds more sweetness. I love soups, so I know this will be delicious. Thanks!
