Low carb blueberry cobbler recipe:
CUBAN SANDWICH CASSEROLE (NO BREAD!!)
INGREDIENTS:
Pork butt roast
12 slices of Swiss cheese (could use shredded, just used sliced to keep with sandwich theme) I made with shredded this time, one block and it was a game changer, but either works
Sliced deli ham
Yellow mustard
Dill pickle chips
Pickle juice
PREPARATION:
Pork butt:
Cook in slow cooker on high 5-6 hours or low 8-10 hours. I add the following seasonings- cumin, lime zest, lime juice, garlic, salt, pepper, oregano. Once cooked, shred.
After pork is cooked and shredded, preheat oven to 350 degrees and grab a 9×13 casserole dish.
On the bottom, spread out a layer of the pulled pork. Drizzle some pickle juice all over the pork.
Then layer the Swiss cheese, about 6 slices.
Add a layer of sliced deli ham.
Add the yellow mustard, as much or as little as you like. Add the dill pickle chips on the top. Drizzle with more pickle juice if you like.
Cook in preheated oven for 20-25 minutes or until cheese is golden brown. Let sit for 5 minutes, then slice and serve!
This is pretty versatile. Can add as little or as much of all ingredients as you like. The pork but usually depending on the size you get can make 2 casseroles. Can put casserole together and put in freezer uncooked. I’ve tried and it freezes well. Just take out day of and let sit out during the day to defrost and cook as directed.

  1. The casserole looks really good! I'm not much of a pork eater but I'm sure I could use perhaps shredded chicken. As a sidenote, I just wanted to say, you really have thick pretty hair!!   2. That recipe is a must try. Actually, they both are. I'm not a blueberry fan but my husband is and we have blueberry bushes that produce like crazy. I have everything I need to the casserole. I'll let you know how we like it. I have to defrost a pork butt.
