2 cups uncooked elbow macaroni
2 large hard-cooked eggs, chopped
1/2 cup red onion, chopped
2 stalks celery, chopped
1/4 small red bell pepper, seeded and chopped
1/4 small green pepper, seeded and chopped
2 tablespoons grated carrots
1-2 chopped parsley optional
3 tablespoons dill pickle chopped
1 1/2 – 2 cups creamy mayonnaise we used Dukes
2 tablespoons white sugar
2 tablespoons prepared Dijon or yellow mustard
2 teaspoons apple cider vinegar
2 tablespoons dill pickle juice
Pepper to taste
Smoked paprika to garnish
Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally, until tender yet firm to the bite, about 9-11 minutes. Drain and set aside to cool.
Add cooled elbow noodles to a large bowl. Top with onion, celery, bell & red pepper, carrots, eggs and dill pickles in a large bowl. Stir together mayonnaise, sugar, mustard, vinegar, pickle juice in a small bowl. Pour over the veggies, eggs, and elbow noodles. Stir until well combined. Garnish with smoked paprika. Cover and chill in the refrigerator for at least 1 hour before serving.
