As promised, I decided to make one of the soups from Moosewood Cookbook – vegetarian soup. It could easily be made vegan if you substitute butter and replace it with coconut oil. I believe all other ingredients are vegan. The soup came out amazing! It is so hearty and flavorful (I used coconut milk instead of regular milk) and I will definitely be making it again. There is a lot of chopping and cutting of vegetables, so it takes around half an hour to prep everything, but it is so worth it!
