Apple Salad
1 – 20 OZ. CAN CRUSHED PINEAPPLE 1/3 CUP SUGAR 1 – 3 OZ. LEMON FLAVORED GELATIN 8 OZ. CREAM CHEESE (ROOM TEMPERATURE) 8 OZ. WHIPPED TOPPING (COOL WHIP) 2 CUPS CHOPPED APPLES 1/2 LEMON 1/2 CUP PURPLE SEEDLESS GRAPES (HALVED) 1 CUP CHOPPED PECANS
Combine pineapple (juice and all), sugar and gelatin in a saucepan and bring to a boil for 2-3
minutes or until sugar has dissolved. Pour into a
shallow dish and cool to room temperature.
Peel and chop apples. Squeeze a half lemon over
apples and mix well to prevent apples from turning
brown.
Once gelatin has cooled, in a bowl blend in cream
cheese with a hand mixer. Next add whipped topping, apples, grapes, and pecans and fold
together with a large spatula until fruit, nuts and
topping is blended well with gelatin mixture.
Keep refrigerated.
This salad is tart and sweet and very delicious and refreshing. I know you will enjoy it!
Options:
Grapes are optional. Other flavors of gelatin can be substituted for different colors and flavor profiles. Other fruits like mandarin oranges, fruit
cocktail etc. can be added (but they should be drained well).

I don't eat pork and Jello is made with pork gelatin, so I am wondering how lemon pudding would work? In my imagination, it seems like it would. What do you think?

Mmmm, I could eat a bowl of that!! But like Chris said, it does look like potato salad. It may need to set up more and maybe go in a mold…like MY mama did!!!! Tyfs this recipe. 👍👍😘

And if you don't like it super tart, you can put diced apples into a bowl of cold water to prevent them from browning.
These same ingredients but deconstructed on a sugar cookie fruit pizza would be great. Sugar cookie base, cream cheese frosting or a whipped cream base, then topped with diced fruits and pecans.
My favorite is lime jello with celery and shredded carrot.

That salad sure looks so delicious. But lord knows I love sweets but now days I try to eat sugar free/ low calorie dessert.
I would skip the sugar and get sugar free jello and unsweetened pineapple and add everything else. I don’t eat a lot of grapes.

OM…gosh, that looks good! Back in the 1960s my Aunt used to make something of the same omitting the apples she just used drained fruit cocktail also adding about 1/2 container cottage cheese along with cream cheese.Yum! 👍🌹☕❤

Tammy, just a few days ago, I was telling my husband about the Jello recipes from the 1950s. We were both born in the 60s.
He thought I was making up crazy stuff. 🤪
I'm a fan of vintage cookbooks, so I had to show him the savory Jello recipes that were really in cookbooks. Lime Jello salad with salmon or tuna.
Tomato Jello with cheese and beef.
We had fun discussing it. One or more of these recipes will be on our table soon.

Grapes are sold by the pound, not the package, so all you have to do is put the amount you want in a produce bag and weigh them at the register. Any fruit that tastes good has a good bit of sugar, otherwise you have to add sugar to be able to eat it (like cranberries). However, fresh fruit contains fiber and vitamins, so it is much better to eat it than a dessert. Most balanced diets include fruit every day.

I miss the days of jello salads and desserts. I was a kid in the 80s, and we had jello all the time. It's also so good for your hair, skin, and nails.

When I buy grapes to put in my chicken salad, I buy them from the salad bar at Ingles. Also, if I do buy grapes in the bag, I take out most of them because we won't eat them all. They are sold by weight, so you don't have to buy the whole bag. 😊
