For today’s video I tested out some amazing vegan snack ideas, inspired by your suggestions! There’s 8 delicious, super easy and sometimes even quite healthy recipes to go through here – Vegan mozzarella sticks, a chocolate banana mug cake (my new fave), a super simple pineapple- mint-shake and more!

#1 Baked Chickpea Toast

⅓ bell pepper, finely chopped
½ cup rinsed chickpeas (120g)
1 heaping tbsp vegan mayonnaise
a generous pinch of salt
spices of choice to taste: onion powder, garlic powder, paprika, curry powder, chili …
toppings of choice: cucumber slices, fresh parsley, tomato slices, grated carrot, pickled onions, hot sauce …
2-3 pieces of bread

→ serves 1-2

#2 Apple and Pear Tortilla Pizza

a handful of walnuts, chopped
1 small apple, cut into thin slices
1 small pear, cut into thin slices

1 whole wheat tortilla
3-4 tbsp vegan vanilla yogurt
1 tbsp peanut butter or almond butter
finish w a sprinkle of brown sugar and /or cinnamon

→ serves 1
#3 Minty Pineapple Shake

6-8 canned pineapple rings (from a 432g / 15,23oz can)
½ cup of pineapple juice from the can (125ml)
about 20 fresh mint leaves
the juice from 1-2 limes
about 8 ice cubes

→ serves 1-2

#4 Orange Avo Combo

1 orange
1 avocado
a small handful of sesame seeds
perhaps a squeeze of lemon juice over everything!

→ serves 1-2

#5 Banana Chocolate Mug Cake

1 small-medium banana, fresh or frozen
2 tbsp flour
2 ½ tbsp unsweetened cocoa powder
1 tsp baking powder
¼ tsp cinnamon
2 heaping tbsp almond butter
2-3 tsp sugar
3-4 tbsp non dairy milk (start with 3, see if you need more)
a handful of vegan chocolate chips
1 tsp oil for the mug (makes it easier to eat the cake later)

→ serves 1 or for 2 to share

#6 Fancy Red Beet Toast

2-4 pieces of bread
1 clove of garlic to rub the toasted bread with (optional)

1 cooked beet, cut into super thin slices
vegan cream cheese
a squeeze of lemon juice for each bread
a light drizzle of olive oil (optional) over each bread
salt, pepper to taste
a sprinkle of toasted sesame or pumpkin seeds
a handful of kress, herbs of choice arugula …

→ serves 1-2

#7 Vegan Mozzarella Sticks

3 tbsp corn starch
50g tapioca starch (⅓ cup + 1 tbsp)
⅓ tsp salt
¼ tsp garlic powder
1 tbsp vegan butter
125ml non dairy milk (½ cup)
1 tbsp white wine vinegar
1-2 handfuls vegan pizza cheese (optional, but recommended)

80-120g bread crumbs* (½ – ¾ cup)
a pinch of salt + if desired other spices of choice for the breadcrumbs
80ml non dairy milk, for dipping the breaded bites in (⅓ cup)

ketchup, marinara sauce, bbq sauce etc. for serving

*start with ½ cup, see if you need more as you go

→ yields 7-10 sticks, depending on their size
→ deep fry for 1-3 minutes until golden brown

#8 Hazelnut & Peach Iced Tea

3-5 peach tea bags
1-2 earl grey tea bags
1 litre of water, boiling (4 cups)
1 1/2 cups of ice (12 ice cubes), more if desired

1-2 handfuls of hazelnuts, peeled and roasted
2 canned peaches, cut into cubes
optionally: ½ cup (125ml) of the peach juice
optionally: 2 tbsp liquid sweetener of choice

→ I’d recommend to let the peach tea for 10 minutes total, but to remove the black tea after 3-5 min to prevent it tasting too bitter
→ I’d then let the nuts + peaches + liquids sit until fully cooled down
→ then remove the peaches and nuts, but keep them for a future bowl of porridge
→ serve strained tea with ice

→ serves 4

  1. Maybe this is too simple to be included as a snack for a video like this – but I love to fry sunflower-seeds (already peeled ones) in a pan (without oil) and then add soy sauce! Then fry it for maybe a minute longer so that the sauce dries on the seeds – ready 🙂

  2. Love all your videos! Here is a very simple but delicious recipe:
    Cook 1 portion of wholegrain couscous according to the packet but, instead of using just water put a veg stock cube in.
    Then chop up some broccoli into small florets, toss in olive oil, salt, pepper and any other seasonings you would like. Put in a roasting tin and cook @ 180c for 30mins turning half way. Then dice up some cucumber and put in all together. Add a nob of vegan butter or oil and ENJOY! Its soooooooo amazing

  3. A really delicious snack (or little meal even) I've been loving lately is filled bell peppers! Just take one or two bell peppers, cut off the upper part and preheat your oven to 200°C. I used a filling of cooked Quinoa, sauteed in a pan with soaked soy granulate (some smoked tofu would also work fine), spices, tomato paste, carrot, garlic and onion (and whatever else you like, really). Some vegan cheese on top would also be nice. Then just fill the peppers with the mix, bake them in the oven for like 25-30 minutes and you're done!! I usually top mine with coconut yoghurt and have them with a side salad. Super delicious and easy 😛

  4. i hv another recipe idea for u that might sound weird but it's one of the most famous snacks in indonesia! basically just prepare a cup of frozen corn kernels, thaw it in microwave/steam it, then add vegan butter, dark cholate, splash of almond milk, and top it w/ shredded vegan mozarella (or vegan white cheddar cheese, if u hv those. non-vegans would ususlly use kraft's processed white cheddar). it's one of my favorite go-to snacks and easy to make under 5 min. (if u use microwave)

  5. Maybe more of a meal than a snack: bean patties

    Mash a can of rinsed kidneybeans roughly(this adds some texture). Add wheat semolina (Weich bzw. Hartweizengrieß) and spices and herbs of choice (i like salt, pepper, smoked paprika, a bit of italian seasoning and a splash of soy sauce and/or Maggi-Würze).
    Let it sit for around 15minutes. This step is important! The wheat semolina will absorb some of the liquid from the beans, and the patties will be less likely to fall apart.
    Fry in a pan on high heat.

    You might want to experiment adding egg substitutes, to give them more stability.

  6. Fake small cheesecake:

    What you Need:

    – 1 small pastry ring (mine is 6 cm)

    – 6 biscuits

    – vegan yogurt ( l recommend using a White one or coffee // chocolate flavored).

    – coffee (the needed quantity)

    1. Start by mashing the biscuits.
    2. In a Bowl combine the biscuits with coffee.
    Start with 1 tbs of coffee and then add One at a time.
    The mixture should be not too wet and not too dry.
    3.Place it in the pastry ring and level It.
    4. Once the mixture Is flat put the yogurt over it.
    5. Place it in the frigde overnight or for 4/5 hours.
    6. When it's ready to be taken out of the frigde: take it out, remove the pastry ring and enjoy!

  7. Not really a snack but an oatmeal idea!
    Blend soft tofu, non dairy milk, and some type of fruit or other food item (like squash or sweet potato) with a little bit of water. Soak your oats with this blended mixture for super creamy oats! Adjust the amount of tofu and liquid used to get your desired creamy consistency.

  8. A really good food combo is Cucumber, half a lime, salt, and paprika. Peel your cucumber and then cut them into thin slices but they aren’t so thin they fall over when held upright. Plate the cucumbers and use half a lime, covering all the cucumber slices. Add your salt and a nice layer of paprika, season to liking. Chefs kiss <3

Hi Mina, I just discovered your channel and you don't know how much calm and good vibes you transmit to me, I've been struggling with anorexia for five years and now I am recovering, which is hard sometimes, but your videos motivate me a lot, seriously, they make me want to cook the wonderful recipes that you share and enjoy them, having a healthy relationship with food, I don't know you but surely you have a beautiful soul, that said, I hope you have a good weekend and thank you for making these videos.   10. Fruit sushi! Make coconut rice with sushi rice and coconut milk, cut a champagne/ataulfo/honey mango into strips, cut a kiwi into strips, dip rice paper in warm water, spoon rice onto dipped rice paper and stack kiwi/mango on top. Shape by rolling forward once then tucking in the sides then roll forward until all is wrapped. !! Cut into individual pieces or eat as a roll, maybe make a fruit sauce/vegan yogurt/ coconut cream dipping sauce

  11. Einer meiner lieblings snacks ist Blätterteig Schnecke mit verschiedenen Füllungen:) zB ganz einfach mit pesto oder auch im "pizza style" mit Tomatensauce, veg. Käse und Peperoni oder zB auch mit einem selbstgemachten kürbis dip😄
    Ist so easy und schnell aber mega lecker!

An absolutely amazing food combination/ snack/ recipe I made up is Baked Crumpets- chopped 2 crumpets in oven proof dish with 1 flax egg/chia egg, splash of non dairy milk, mashed banana, cinnamon if desired (mix these ingredients altogether and then pour over the chopped crumpets). Bake in oven for 15 mins at 180C, then add toppings (peanut butter, choc chips, berries!) can also add frozen berries at the start before you bake and they melt it’s so so yummy!!! It’s like a simple version of a mix between banana bread and french toast! You should definitely try 🥰

  13. My favourite lazy snack is two to four tablespoons of tahini (four is super rich), a tablespoon of cocoa powder, and a tablespoon and a half of maple syrup or other liquid sweetener. Stir it all up and pop it in the fridge or freezer for a bit to cool and you have a super rich fudge esque thing.

  14. honestly, this is the first video of yours I've seen but that's all I needed to know I needed to sub.. loved the idea for the pineapple mint drink.. it sounds amazing.. and those vegan cheese sticks.. I should be in bed but after this I feel like raiding the fridge..
