There is nothing like a warm bowl of this veggie packed Minestrone soup to bring up the vibes on a chilly fall or winter day! I show you how to make it from scratch so you too can feel the love of this soup. Recipe: (*I’ll try and get Crystal to make this better, I suck at writing recipes out, she handles the organization of everything around here) First chop 1/2 cup chopped onion (about 1/2 an onion) 1 cup chopped carrot 1 cup chopped celery 2 cloves garlic Then saute for 10 minutes. Add a few tbsp of crushed tomato to help the sauté Add the spices a few minutes before the veg is done sautéing 1 tsp fennel 1 tsp cumin 1 tsp saviry 1 tsp of Twin pillars 1 tsp peppe 1 tsp oregano once the veggies are soft add to the pot 2 liters of vegetable broth (I used Better Than Bouillon) 1 Large can of crushed tomatoes (28 fl oz. 800 ml) Bring to a boil Simmer for 10-20 minutes Add 2 cups pulse 1 cup of sliced Brussels sprouts 1 can of white beans Cook for another 8 minutes. Stir in 1 cup of frozen peas and remove from heat. Enjoy!
