  1. If you're left-handed like John (and me), make sure you have knives that are suited for left-handed use. I didn't know that there was any difference or that there even were left-handed or right-handed knives until a few years ago. I just thought I must not be very good at chopping and cutting. One day I realized that my paring knife was sharper on the "outside" of the knife—the part of the knife facing away from you while you're cutting with your left hand. And then it dawned on me–im using right handed knives! No wonder I'm struggling!

    I went looking for left handed knives and found out they are super expensive. After more research I learned that knives with a 50/50 bevel are equally suited for either hand, but you're not going to find cheap 50/50 bevel knife sets either. There are a few in the mid-price range. Many knife sets with a 50/50 bevel are made in Japan, for some reason. They also make awesome left-handed scissors. I really appreciate the Japanese craftmanship when it comes to left-handed tools, knives, etc.

    I just wanted to mention this for any other left-handed people who feel awkward when chopping. It's not you, it's the knife! I recently bought my first ever left-handed paring knife and I can't believe the difference. It suddenly became incredibly smooth and easy to slice paper thin onion slices and tomatoes. I plan on eventually getting a nice 50/50 bevel knife set after doing more research because these sets are not cheap and should last for many years with proper care.
