1. Grab 1.5lbs of wings and put them into a bowl. Season well with sea salt and 1 tablespoon of baking powder. Toss well, then try to separate them as much as you can from each other and let sit for 30 minutes.

2. To make the seasoning, in a small bowl, combine 1 tablespoon of aleppo pepper (or your favorite chili flakes), 2 tablespoons of garlic powder, 1 tablespoon of a high quality smoked paprika, just a touch (about 1/8 tsp) of turmeric, and fresh ground pepper, and mix well.

3. Season the wings with the dry seasoning, covering every surface.

4. Preheat Airfryer to 400F. Then place the wings in for 20 minutes. Flip over after 20 minutes, then air fry for another 5-7 minutes. Time varies by air fryer and the thickness of your wings.

5. While the wings are in the airfryer, you have the option of making a delicious truffled parmesan sauce to coat over the wings. To make these, melt 4 tablespoons of butter, then add 1/4 cup to 1/3 cup truffled hot sauce or truffled pasta sauce (I used Truff), 2 garlic cloves freshly minced, and 3 tablespoons of finely grated parmesan cheese. Mix well, taste, then modify as you’d like.

6. Toss the wings in with the sauce, then top with sesame seeds and fresh chive.
