  1. Welcome to the PNW! As a Colorado transplant I also love all the green but sometimes I feel a little claustrophobic with all the trees. I miss the wide open plains at times. That view looking south at the front range from DIA is something of a nostalgia for me now. Thanks for all the recipes. It's a bit overwhelming trying to keep a healthy vegan diet at the beginning. It's been a challenge for the past two years.

  2. I like the country crock plant sticks but I freeze them and grate them into the flour like cheese. I've also been OBSESSED with making a simple Alfredo out of cashews with lots of coarsely ground black pepper. Yummmmm. I sometimes blend jalapenos into the sauce tho bc we love spicy things in my house.
