Lemon basil quinoa is delicious. Also quinoa salad with avocado, black beans, corn, cherry tomatoes, olive oil, lime juice, all spiced with cumin.
I just discovered quinoa a few months ago and have come to love it. So versatile! I eat it for breakfast instead of oatmeal or use it to replace white rice in fried rice recipes. I can only eat about half a cup though. More than that and my BG goes through the roof. And, yes, be sure to rinse it well before cooking. Keep the recipes coming, it really helps! Bless you!

With 18.5 net carbs per 100 gram serving that would spike my blood sugar! Then mixing with other carbohydrate rich veges or grains, wow. I agree that many of the recipes sound good but I would pass on the carb load as a type 2 diabetic who has reversed my HgbA1c down to 5.3
