ASIAN CUCUMBER SALAD
Serves: 4
2 medium cucumbers
2 cloves garlic, minced
2 T soy sauce, tamari or liquid aminos
1 T sesame oil
1 t rice vinegar
1 T toasted sesame seeds
1 t red pepper flakes
1 t ChocZero Maple Syrup or brown sugar substitute

1️⃣ Cut the ends off each cucumber. Place a cucumber in between a pair of chopsticks. This will keep you from slicing all the way through the cucumber. Cut at a 45 degree angle about 0.5 – 0.75 cm spacing along the cucumber.
2️⃣ Flip the cucumber over. Make 90 degree cuts (or perpendicular). Line up each cut with the previous cut mark to make the perfect slinky shape. Repeat with other cucumber. Place cucumbers in a small bowl.
3️⃣ To the bowl, add minced garlic, soy sauce, sesame oil, rice vinegar, sesame seeds, red pepper flakes and brown sugar substitute. Mix until coated. Refrigerate for 1 hour or overnight.

TIKTOK RAMEN
Serves 1
1 package keto ramen noodles (see above)
1 T butter
1 clove garlic, minced
1 teaspoon brown sugar substitute
1/2 t everything bagel seasoning
1/4 t red pepper flakes
2-3 T soy sauce, optional

1️⃣ Discard the spice packet that comes with the keto ramen noodles. Add noodles to a medium saucepan filled with water and bring to a boil. Boil for 3-4 minutes or until noodles have softened. Strain noodles to remove the water. Set aside.
2️⃣ To a medium skillet, melt butter over medium heat. Stir in garlic and red pepper flakes and cook until fragrant. Stir in brown sugar sweetener, everything bagel seasoning and soy sauce (if using).
3️⃣ Add the cooked ramen noodles to the skillet and stir to evenly coat.

SESAME CHICKEN SALAD
Serves: 4
2 T rice vinegar
3 T tahini
1 t toasted sesame oil
1 T soy sauce, tamari or liquid aminos
1 t brown sugar substitute
1/4 t salt
1/4 t pepper
4-6 c butter lettuce
1 c shredded red cabbage
1/4 c chopped cilantro
1 green onion, sliced
1 T slivered almonds
1/2 t toasted sesame seeds
1/2 t black sesame seeds
24 oz cooked or grilled chicken

1️⃣ In a large bowl, add tahini, rice vinegar, soy sauce, toasted sesame oil, brown sugar substitute, salt and pepper. Whisk until combined.
2️⃣ To the top of the dressing, add lettuce, red cabbage, green onion, cilantro, slivered almonds, sesame seeds and chicken. Toss.

PASTA CHIPS
Serves: 8
8 oz low carb pasta (see above)
2 T olive oil
3 T grated parmesan cheese
1/2 t Italian seasoning
1/2 t garlic powder
salt and pepper to taste

1️⃣ Cook pasta in boiling water according to package directions. Cook until al dente. Drain and add to a medium bowl.
2️⃣ Add olive oil, parmesan cheese, Italian seasoning, garlic powder, salt and pepper. Toss or stir to coat.
3️⃣ Place an even layer of pasta in the basket or tray of an air fryer. Air fry at 400 degrees for 6 minutes or until crispy.

  1. Hello There! I must share with you that I have tried two of your recipes thus far. The lasagna with the ham slices and the stuffed Italian sausage. These two dishes were questionable. I couldn't get past the fact that there were ham slices in the lasagna…blech….just didn't taste right and the stuffed sausage? After taking the sausage out of the oven-they were swimming in water/grease and the sauce was virtually non-existent. They didn't look like your thick saucy dish of sausage. I definitely am not trying to mean here…I just wanted you to know my experience with your recipes. Some things are better left unchanged. Not everything can be keto. If I want to splurge on lasagna, I will just have the real thing. Have a great day!

  2. Food for special diets is so much more expensive than "regular" food. Shopping for a gluten-free, for instance, can bring on sticker shock. I understand that a small percentage of people need these foods and it requires conscientious manufacturing procedures which raises prices, but still it is a budget concern.

  3. I looked up the Ramen Noodles on Amazon to check out the ingredients. Sure enough…….they contain Maltodextrin. A huge no no for diabetics, it hits harder than pure sugar. It also is NOT a keto friendly ingredient. So back to dreaming about enjoying ramen again. 😮‍💨

That looks delicious If you're tired of turning TikTok recipes KETO,  here's one of my specially curated recipes, which I call the "Pen, Pasture and Patch," combo:  A braised 12 oz. pork belly, with a Teriyaki marinade, served next to a braised lamb shank. Top it off with fingerling potatoes gently pan roasted in EVVOO for the side. Bon apetit!

  5. I laughed when I saw someone going crazy about the “new” crunchy pasta snack on TikTok. Forty years ago we didn’t have a lot of money when we first got married and were saving for things. Using either regular pasta or chickpeas, (because I wasn’t keto) and an oven, this was what we ate for crunchy snacks instead of chips. I’d make batches and season them like chips – barbecue, sour cream & chive, salt & vinegar, ranch, etc.

    I’d love to try this with the lupine pasta, but it’s terribly expensive, especially with half of it crumbling away, so it’s a no. As is the cucumber thing. The salad looks good, but it’s really nothing new. 🤷🏼‍♀️

  6. Wow! The Lupin noodles are $34.99 for 3, 8 ounce packages and the Ramen packs are 39.00 for 6! Thats some sticker shock! I did love the video and appreciate all your tips and recipes. Beautifully done as usual. Wish I could try these. Maybe after things get going better with the economy the prices might come down. 🤞🙏
