ASIAN CUCUMBER SALAD
2 medium cucumbers
2 cloves garlic, minced
2 T soy sauce, tamari or liquid aminos
1 T sesame oil
1 t rice vinegar
1 T toasted sesame seeds
1 t red pepper flakes
1 t ChocZero Maple Syrup or brown sugar substitute
1️⃣ Cut the ends off each cucumber. Place a cucumber in between a pair of chopsticks. This will keep you from slicing all the way through the cucumber. Cut at a 45 degree angle about 0.5 – 0.75 cm spacing along the cucumber.
2️⃣ Flip the cucumber over. Make 90 degree cuts (or perpendicular). Line up each cut with the previous cut mark to make the perfect slinky shape. Repeat with other cucumber. Place cucumbers in a small bowl.
3️⃣ To the bowl, add minced garlic, soy sauce, sesame oil, rice vinegar, sesame seeds, red pepper flakes and brown sugar substitute. Mix until coated. Refrigerate for 1 hour or overnight.

1 package keto ramen noodles (see above)
1 T butter
1 clove garlic, minced
1 teaspoon brown sugar substitute
1/2 t everything bagel seasoning
1/4 t red pepper flakes
2-3 T soy sauce, optional
1️⃣ Discard the spice packet that comes with the keto ramen noodles. Add noodles to a medium saucepan filled with water and bring to a boil. Boil for 3-4 minutes or until noodles have softened. Strain noodles to remove the water. Set aside.
2️⃣ To a medium skillet, melt butter over medium heat. Stir in garlic and red pepper flakes and cook until fragrant. Stir in brown sugar sweetener, everything bagel seasoning and soy sauce (if using).
3️⃣ Add the cooked ramen noodles to the skillet and stir to evenly coat.

SESAME CHICKEN SALAD
2 T rice vinegar
3 T tahini
1 t toasted sesame oil
1 T soy sauce, tamari or liquid aminos
1 t brown sugar substitute
1/4 t salt
1/4 t pepper
4-6 c butter lettuce
1 c shredded red cabbage
1/4 c chopped cilantro
1 green onion, sliced
1 T slivered almonds
1/2 t toasted sesame seeds
1/2 t black sesame seeds
24 oz cooked or grilled chicken
1️⃣ In a large bowl, add tahini, rice vinegar, soy sauce, toasted sesame oil, brown sugar substitute, salt and pepper. Whisk until combined.
2️⃣ To the top of the dressing, add lettuce, red cabbage, green onion, cilantro, slivered almonds, sesame seeds and chicken. Toss.

8 oz low carb pasta (see above)
2 T olive oil
3 T grated parmesan cheese
1/2 t Italian seasoning
1/2 t garlic powder
salt and pepper to taste
1️⃣ Cook pasta in boiling water according to package directions. Cook until al dente. Drain and add to a medium bowl.
2️⃣ Add olive oil, parmesan cheese, Italian seasoning, garlic powder, salt and pepper. Toss or stir to coat.
3️⃣ Place an even layer of pasta in the basket or tray of an air fryer. Air fry at 400 degrees for 6 minutes or until crispy.
